Foodies welcome to ‘graze’ as Mark Greenaway’s new restaurant opens

EDINBURGH’S Waldorf Astoria, The Caledonian, launched a new restaurant by celebrated chef, Mark Greenaway, last night.

Grazing by Mark Greenaway has a laid back ‘grazing’ concept which showcases a mix of traditional, modern and sharing plates, incorporating locally sourced ingredients and unique concept dishes created by the chef.

At its launch last night food demo stations allowed guests to try stand-out dishes, such as BBQ shiitake mushrooms on toast, cured meat and choux pastry picnic boxes and fluffy Japanese buttermilk pancakes.

The restaurant which has recently undergone refurbishment has maintained its informal look and feel.

Mark said: “We have been working really hard the past couple of months to get the concept of Grazing just right, and it was rewarding to see it so well received by our guests last night.”

Dale MacPhee, General Manager at the Waldorf Astoria Edinburgh, said: “Mark has injected lots of energy and enthusiasm over the past few weeks, there has been huge excitement across the hotel as staff have watched the new restaurant offering come together.

“My team were proud to unveil ‘Grazing by Mark Greenaway’ last night and hear so much positive feedback about the food already.

“I’m sure Grazing will make its mark in the West End very quickly among locals, corporates and visitors alike.”
