Two customers were also in the store throughout the robbery.
The man is described as being between 5ft 7in and 5ft 9 in and of a slim build.
Police are now appealing for witnesses and anyone with any information should contact Lothian and Borders Police on 0131 311 3131 or Crimestoppers on 0800 555 111.
